Vegie-Cracker

My mom loves gardening...When she is off from work, she HAS TO BE in her garden, otherwise she gets so cranky. So you know when her day off is rainy day...nobody wants to touch her because... well, but we cannot complain too much because she is doing great job in her garden growing 100 % organic vegetable for us.
In this time of the year, we have Japanese radish (daikon), carrots, green onion, Japanese lettuce(hakusai), broccoli ready to be used anytime. Because its all organic, I feel sorry to waste any part of it.
So, this is what I do, Vegie-Cracker!!

-80 g Carrots leaves (daikon leaves, green onions, or anything!)
-100g whole wheat flour
-1/2 cup of sesame or walnuts
-1 tbsp of canola oil
-1/2 tsp of salt +black pepper

1. Put vegetable leaves in the food processor and blended till get small pieces. Then add flour and blend it again. Adding the rest of the ingredients little by little, and blended into one big dough(like play-dough)
2. Spread the dough onto the cooking sheet as thin as you can (use wine bottle makes job easier!) and draw a cutting line with knife as your favorite shape. I like to make them really skinny stick shape, great with dipping sauce at snack time!
3. Pre-heated oven (160 degrees, about 320F), bake for 30 min. Check between! It doesn't taste good when it burns...

* You can play around with ingredients. Add more flour if the dough is too wet, or add little water if it's too dry!
*Cook little more if its too soft.
* You can store this cracker in the freezer. Just take it out from the freezer about 5 min. before your serving time :)
Great for snacks, quick lunch, and light night meals!
