It is getting cold!! Last night, the temperature went down to 2 degrees, and our fire place was as hot as it could be! Papa brought extra logs in, and mama kept the fire go on and on! For that cold night, I decided to make Cauliflower stew!
-1 big cauliflower
-1 onion
-1 boiled egg
-50-100 g of any mushroom
-3 cups of chicken soup broth
-1 cup of milk+1/2 cup of corn flour (mix and melt it in the milk)
-1/2 cup of fresh cheese (shredded)
-bay leaf
-salt and pepper + thyme
1. Chop cauliflower and onions into small pieces and stir-fry in the fry-pan, add some mushroom, bay leaf and chicken broth and cook till cauliflower gets soft.
2. Take out the bay leaf, and pour #1 in the blender. Add a boiled egg, and turn on the blender till all the ingredients become smooth.
3. Put #2 into the pot and add milk, cheese, salt and pepper and cook in law heat for 10-15 min.
*Add more spices as you like. This is a great souse for soup pasta as well !
