Cornbread


Papa's friend brought a bag of Masa from U.S. !! Yeah!! We are so happy and I baked cornbread right away! This recipe doesn't use any butter, eggs, sugar or milk...but still tasted good and papa loved it! oh, and our little muffin Lio kept eating it with little hands! Papa said, "I love this bread, but there will be nobody like it more than Lio does!"

Here is the recipe. It's super easy and healthy one :)

Masa(or corn meal)-2cups
Flour -2cups
Salt-1 tsp
Baking Powder-2tsp
Corn-1 boiled (or steamed) corn

Canola oil-1/2cup
Water -1 1/2 cup to 2cups (depends on the dough. I used MASA instead of cornmeal, and I put 2 cups of water to make the dough soft enough to pour into the pan)

1) mix dry ingredients in a bowl, add oil and mix with both hands.
2) add corn pieces and mix. then add water little by little as you mix with spatula.
3) pour into a oiled baking tin and bake for 25-30 min. at 350(or 180℃)in the pre-heated oven.

yum yum! It's not really fluffy one, but I like this type of heavy bread :) Good with salsa for lunch, or with maple syrup for snack!
